Is a softbox studio lighting kit adequate for shooting an interview?

Is a 2 light softbox set up suitable for shooting an interview in a room with all white walls? I know a three light set up is the ideal, but will the white background compensate for the lack of a back light? I am shooting with a standard mini DV camcorder.
I am asking this as I have not yet purchased the lights and I am wondering if this is the best option on a budget or if there is another way that would be better and/or cheaper. Thanks.
